Help me out then Joe.

New build ESX 5.5 (freebie), vswitch with 2 nics, going to same switch, NIC's setup as active/passive.

2 VM's setup with static IP,DNS,G/W etc. One will ping the gateway, 1 won't. If I swap the NIC's (in ESX, not on the VM), ping goes from one to the other.

WTF is going on? Even moving around the 2 unplugged NIC's, causes it to f**k up. It's a network mess!

I've recreaded the NIC's on the VM's, as well we the whole vswtich and nothing.!

I'm no networks expert either Sam, so I'll just make stuff up as thats my real job .. :

Theses are fresh vms right? If not, is there anything lurking in the hosts files, maybe they're not actually talking to the machine you think they are?

Assign them two new static ips temporarily, do you get the same issue?
